Nothing fancy here, just a basic chili. Some beef, some tomatoes, some onions and peppers, some other stuff and an appetite are all you really need for this. Well, that and a stove.
The nice thing about this recipe is that, whether you decide to make it as written or to improvise a bit, it’ll turn out great. It takes about a half hour to make, and it makes about four to six servings. Get out your favorite skillet and let’s go!
1 lb coarse-ground beef
Salt & pepper to taste
1 small white onion (chopped)
1 tsp finely chopped garlic
1 tsp chili powder
1 tsp cayenne
1, 15oz can of kidney beans (drained)
1, 14.5 oz can tomato paste
1, 10oz can diced tomatoes
1 diced red bell pepper
Shredded cheddar cheese
In a bowl, break the meat into bite-size chunks and season thoroughly with salt and pepper. In a large, nonstick skillet, brown the meat and toss in the onions, garlic, chili powder, and cayenne, stirring often.
Once the meat is browned, add the tomatoes, peppers, and tomato paste, and mix well. Reduce the heat to low and simmer for ten minutes. Serve sprinkled with cheese and a dollop of sour cream.
