As I promised, the snack marathon continues, here on Apartment Eats!
This week, we’re featuring mini pizzas — a snack that’s sure to please even the pickiest of eaters. Personally, I’m making this batch to take with me to work and have for lunch. It’s sure to make my coworkers jealous (it’s certainly making the boyfriend sad that he can’t eat them all)!
These little three-bite pizzas are as easy to make as they are to eat, and you can make quite a lot with relatively few supplies, so long as you’ve got the dough for it (biscuit dough, that is). How do you make them? It’s easy as [pizza] pie!
Ingredients: 1 can biscuit dough, 3/4 cup mini pepperoni, 2 cups shredded cheese, 1 1/2 cups pizza sauce
Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
Flatten out the biscuit dough in your palms to form about 3″ in diameter circles. Lay the rounds out on the baking sheet so that they are about half an inch apart. Spoon about a tablespoon of pizza sauce onto each pizza and spread it around, leaving about 1/4 – 1/2 an inch of dough uncovered around the edges. Pile on the shredded cheese of your choice and top with mini pepperonis.
Bake for 8-10 minutes or until just beginning to turn golden on the bottoms. Remove from oven and let cool for a few minutes before enjoying.
For a slightly different variety, try adding other toppings, such as veggies, sausage, or ham and pineapple — whatever floats your boat!
