Root Veggie Beef Stew

Beef stew is your classic hearty food. It’s a set-it-and-forget it type of meal that rewards you in the evening with a delicious and filling dinner. There are countless variations on it across the internet and throughout cookbooks. Somehow, until now, I haven’t put up a recipe of my own, though I’ve made it many times before. This version is one that’s particularly filling, packed with root vegetables like carrots and potatoes. You can also use this recipe as a base for your own special stew recipe. Change out the veggies, the meat, the liquids, and make this recipe truly your own!

Ingredients
2 medium Red potatoes, cut into chunks
4 Carrots, cut into chunks
1 Parsnip, cut into chunks
2 lbs Stewing beef
1/2 large Sweet onion, sliced
9 Porcini mushrooms, sliced
1, 14.5 oz can Stewed tomatoes
3 cloves Garlic, minced
1 tsp Sage
1 tsp Rosemary
1 tbsp Parsley
1 tsp Thyme
1 Bay leaf
Ground black pepper, to taste
1 cup Beef broth
1/2 cup Red wine (I used Shiraz)

–Chop up all of the root vegetables into bite-sized pieces and line the bottom of the crockpot, carrots and parsnip first, then potatoes. Layer in the beef and season with some pepper and salt. Layer on the sliced onion, mushrooms, and tomatoes. Sprinkle pepper liberally over the top. In a cup, mix together the spices (minus the pepper), garlic, and beef broth. Pour the broth mixture over the top of everything, followed by the wine. Cover and cook on low for 8-10 hours or on high for 4-5 hours. Serve over rice if you wish, and pair with the remainder of the wine.
