Lemon Bundt Cake

My mom has been telling me to make this bundt cake for I-don’t-know-how-long. Initially, I put it off, not because I didn’t want to bake a cake, but because I didn’t want to eat an entire cake. As it turns out, though, bundt cakes freeze super well. So, here’s to a new era of making too much cake (and happy be-earlied birthday to me)!

For the cake
1, 18 oz box Lemon cake mix
1, 3 oz box Instant lemon pudding mix
4 Eggs
1 cup Sour cream
2 tsp Triple sec
1 Lemon, juiced and zested
1/2 cup Canola oil

For the Drizzle
3/4 cup Sugar (granulated)
1/4 cup Butter
1 Lemon, zested and juiced
1 tsp Vanilla extract
Powdered sugar, for dusting

Preheat the oven to 350 degrees F and grease a bundt pan. Using a baking spray or rubbing the pan with butter and following it up with a dusting of flour will help your cake release better.

Combine all ingredients in the cake mix portion of the recipe and pour the batter into the pan. Bake for 45-50 minutes or until a toothpick inserted into the cake comes out clean. Once it’s done, set the cake, still in the pan, aside to cool for at least 10 minutes. In the meantime, make the sauce.

In a small saucepan, melt the butter and add your granulated sugar, lemon, and vanilla. Stir until the sauce is smooth and keep it warm on the stove while your cake continues to cool. After 10 minutes of cooling, poke deep holes in the cake (still in the pan) with a kebab skewer and pour the drizzle evenly over the bottom of the cake. Let it rest for another 20-30 minutes before turning it over onto a cake stand. Dust with powdered sugar and enjoy right away or freeze for a lemony treat whenever you wish!
