Sourdough Banana Bread

Yes, yes, I realize this is the second banana bread recipe I’ve posted this season and the nth one I’ve shared in the history of the blog, but you know what? Variety is the spice of life, and I like my spices. So, have another banana bread recipe and enjoy the fact that you’ve got options. This one is delicious and basically impossible to dry out… even if your husband is in charge of letting you know when the timer goes off and doesn’t hear it. I probably overbaked mine by about five minutes and it still turned out delicious as anything.

3 Bananas, ripe
1/2 cup Brown sugar, packed
3/4 cup White sugar
1 tsp Molasses
1 1/2 tsp Vanilla extract
2 Eggs
1/2 cup Sourdough discard
2 cups Flour
1 1/2 tsp Baking soda
1/4 tsp Salt
1/2 cup Applesauce
1/4 cup Milk

Preheat the oven to 360 degrees F and line a loaf pan with parchment paper.

Cream together the bananas, sugars, molasses, and vanilla extract before adding the eggs and sourdough starter. In a separate bowl, combine the flour, baking soda, and salt. Add the dry ingredients to the wet and mix. Finally, add the applesauce and milk and mix until just combined.

Pour the batter into the lined pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for about half an hour before transferring to a wire rack to cool the rest of the way.
