If you want a filling and easy breakfast, this is your dish!
I tried making hash browns in a pan a couple of times and it just made a mess and took forever. This method, though, combines everything in one bowl and takes a few minutes to cook. Here’s how it works.
Ingredients (for one serving):
1 small russet potato
1 cup shredded cheese
Spices of your choice
Plug in a waffle iron and turn the heat to halfway between light and dark. Let it heat up while you mix the ingredients.
Grate the potato on the larger holes on a cheese grater (watch your fingers!) and put the shredded potato in a medium bowl. Add in the spices (I used ~1 tsp onion powder, a couple pinches of chives, a pinch of rosemary, ~1 tsp pepper, ~1/2 tsp salt, ~1/2 tsp cayenne) and add in the cheese. Add in any meats or other dry add-ins you want.
Mix the dry ingredients together before adding the two eggs. Lightly scramble the two eggs and mix them into the dry ingredients until everything is bound together with the eggs.
Grease the waffle iron with cooking spray. Pour the mixture into the center of the waffle iron and close the top. Let it cook for 3-5 minutes or until eggs are solid and the “waffle” can be picked up with a fork about 1/4 of the way before it starts breaking apart. Lift it out of the waffle iron with a spatula, top with your favorite hot sauce, and enjoy!
