Here’s a recipe for some quick scratch pancakes! I’ve got a friend over for the next couple of days and I decided to make some pancakes for the two of us this morning. At first, I was a bit hesitant about these, seeing as I hadn’t made non-buttermilk pancakes from scratch before. Personally, I still prefer buttermilk, but we got a hearty thumbs-up from my taste-tester, Brianna, so here we are!
2 cups flour
2 tbsp white sugar
1 tbsp brown sugar
1 tsp cinnamon
1/2 tsp vanilla extract
1 tsp salt
2 tbsp baking powder
2 eggs, beat them separately before adding to mixture
1⁄4 cup butter, melted
1 3⁄4 cups milk
Ripe bananas (optional)
Combine all ingredients but the caramel bits and the bananas in a large bowl (this recipe has twice the yield of my usual recipe, so be warned). Meanwhile, heat up a griddle to about medium heat.
Using a 1/3 cup measure, portion out scoops of batter onto the griddle and sprinkle on the caramel bits and, if you wish, banana slices. Flip the pancakes when bubbles begin popping in the center of the cake.
Serve plain or with honey (or syrup if you’re the traditional sort) and enjoy!
