Chewy Gingerbread Cookies

I love ginger, and I love cookies, but one of the banes of my baking existence for years has been gingerbread. I’ve never had much luck making the buildable kind, and when I do, I’m never satisfied with the texture. This year, after trying some soft ginger cookies, I was inspired to give it another go, but with a different end goal.

2 1/4 cups Flour
1 tsp Baking soda
3 tsp Ground ginger
1 tsp Cinnamon
1/3 tsp Ground cloves
3/4 cup Salted butter, softened
1/2 cup Sugar
1/2 cup Brown sugar
1 Egg
1 Egg yolk
1/4 cup Molasses

In a medium bowl, combine the flour, baking soda, and spices. Set it aside for later. In a mixing bowl, cream together butter and both sugars until they’re smooth and a little fluffy. Add in the eggs and molasses and combine before gradually adding in the flour and spices.

Cover the bowl and place it in the fridge for 30 minutes to firm up the dough. In the meantime, preheat the oven to 350 degrees F and line a couple of baking sheets.

Scoop and roll the chilled dough into ~1 inch balls. Toss them in coarse or granulated sugar if desired before placing them on the cookie sheet. Bake for 8-12 minutes and let the cookies cool on the pan for a few minutes before moving them to a wire rack. Enjoy fresh or freeze for later!
