Mexican Hot Chocolate

If you’re someone who enjoys being adventurous with their hot chocolate, then I have a recipe for you! If you’ve never had Mexican hot chocolate before, you’re in for a treat. Putting Swiss Miss to shame, Mexican hot chocolate is the perfect blend of chocolate and spice, making it the perfect drink for a cold winter’s day. This recipe is actually faster to make than instant hot chocolate, and if you’re like me and don’t like excessively sugary drinks, you’ll love this one. If you like bittersweet chocolate, adding only a tablespoon of honey to the pot (which makes one serving of hot chocolate) is just right. I also personally recommend using wildflower honey, if you can get your hands on it. I find the flavor to be more rich and nutty than clover honey, though it does also tend to be a bit more expensive.

As I mentioned, this recipe makes one cup of hot chocolate —  about 8 oz. If you’re making it for a crowd, adjust the recipe to suit. If you’re vegan or vegetarian, sub in your milk substitute of choice (something thick like soy, banana, or cashew would probably work best) and either agave or maple syrup for the honey and cut the amount in half. This is the first time in years I’ve been able to enjoy a cup of hot chocolate without getting an upset stomach from all the sugar in it, so I’m SUPER excited to share this recipe with everyone.

Ingredients
2 tbsp Cocoa powder
1/4 tsp Cinnamon
1/4 tsp Cayenne
1/8 tsp Ground nutmeg
1 cup Milk
1-2 tbsp Honey

In a small saucepan, heat all the ingredients except the honey, stirring gently with a whisk. Once the mixture has been brought to a simmer (or starts to steam, if you want to be able to drink it immediately), add in the honey to taste. Pour the hot chocolate into a cup, add some marshmallows, and enjoy! Simple as that!
