Ricotta Rice Pudding

I had ricotta leftover from another recipe I made recently, and I had a craving for rice pudding. The result: This recipe. Rice pudding is great because it’s one of those desserts that you can convince yourself is healthy when really, it’s not. It sits in a limbo somewhere between sweet oatmeal and Frosted Flakes. Yes, it’s a whole grain, but it’s also sugar and cream. Healthy? No. Delicious? Absolutely.

2 cups Rice, cooked
1/2 tsp Almond extract
1 cup Milk (or milk substitute)
1 cup Ricotta
1/3 cup Sugar
1 tsp Cinnamon
1 tsp Cardamom
1 cup Raisins (optional)

Take your two cups of dry rice and cook it with the almond extract. Transfer it to a pot or large saucepan and add milk, ricotta, and sugar. Stir in cinnamon, cardamom, and raisins (if you’re using them), and cook over low heat until thick. Serve hot or cold and enjoy
