Back on the theme of party-friendly foods, here is a dish to pass that will suit anything from a picnic to a sports party. I know I’ll be making this one again for an upcoming potluck! This cold salad is a classic with a twist — macaroni salad with cheese and veggies.
The recipe, courtesy of Center Cut Cook, is something I’ve been waiting to make for almost a week, since I revisited the recipe I reshared to my Facebook recipe page, a while back. Now that I finally have a chance for some quality kitchen time, I get to put on some music and enjoy the company of my friends as I whip up something good.
It’s a pasta salad, so the first thing you need to do it make the pasta. You can do it later, but you’d really just be inconveniencing yourself.
While you are waiting for the water to boil, you can either start chopping up the veggies… or you can show off things around your kitchen to your friends. I don’t always have my priorities straight.
So, I started off by chopping the peppers. One half looked very surprised.
I tried speeding up the chopping process by throwing some slices of pepper under my little hand chopper thing that I use to chop nuts. Turns out it doesn’t work that well for soft foods. The pieces of pepper needed further chopping and the fragments looked premasticated. Needless to say, I went back to chopping the peppers by hand.
Peppers, celery, and onion chopped, it was time to move on to mixing the dressing and adding in the pasta.
After the pasta is mixed in, throw in the veggies and the cheese chunks, mix it up, and you’re ready to go!
