This is probably the quickest, easiest way to make dinner, be it just for you or for a small crowd. One-pot pasta is just that, all in one pot. Just cut some stuff, cook some sausage, and throw everything in the pot! It’s incredibly easy, super filling, delicious, and keeps pretty well.
Here’s how it works…
3 cups halved grape tomatoes, divided
1 large onion, sliced
1 pound Italian sausage, cooked (sliced into coins)
30 basil leaves, divided
4 garlic cloves, sliced
1 pound dry fettuccine
1/2 teaspoons kosher salt
1 teaspoon fresh ground pepper
4 1/2 cups water
1 cup shredded Parmesan cheese
Set aside 1 cup of the halved tomatoes, 10 basil leaves, and the cheese.
Place all the remaining ingredients in a large (12″) braising pan, dutch oven, or in my case, a really big pan with tall sides, and turn the heat to medium. Cover the pan and bring the water to a boil. Once it’s boiling, remove the cover and cook for 7-10 minutes more, or until the pasta is al dente. Occasionally move the pasta around with the tongs to keep the pasta from sticking. By the time the pasta is cooked through, the liquid will be mostly absorbed.
Now, add in the cheese and toss it all together to combine. If the cheese clumps, just keep mixing and tossing it around, and it will melt into the sauce after a few minutes. Once the cheese is mixed in, toss in remaining tomatoes and basil (if desired) before serving.
