If you’re experiencing the holiday rush and need to make a lot off cookies stat, here’s a trick that will save your sanity for sure. Cake cookies are exactly what they sound like. You use store-bought cake mix to create fast, easy cookies. Make them as simple or as wild as you want, the base recipe is pretty much the same across the board.

I’ve made a few different combinations and variations for different people and events, and they’ve all been a huge hit. I’ll include some of my favorites, as well as ideas you can take and run with if you’d like. The best thing about cake cookies is that they are super customizable and totally up to you. If you want to make a lemon poppyseed cookie or a seven layer bar, you do you!

The base recipe goes like this:

1 box Cake mix
2 Eggs
1/3 cup Oil
1-2 cups of Goodies!

Preheat the oven to 350 degrees F. Combine all ingredients and scoop them onto a lined baking sheet with an ice cream/cookie scoop. Bake for 10-12 minutes. Cool on the pan for a few minutes before transferring to a wire rack. Store in an airtight container and enjoy!

Now, the main thing to keep in mind when you’re making variations on these cookies is that if you’re adding goodies with a lot of moisture (fresh fruit, cream cheese, etc.), make sure you adjust the baking time so the moisture has time to cook out a bit. One of Hubby’s favorite variations is strawberries and cream. That needs more like 12-15 minutes to bake. Here are some variation ideas and what goodies to add:

Strawberries & Cream
1 box Strawberry cake mix
1/2 cup Strawberries, chopped
1/2 cup Cream cheese, folded in

Birthday Cake
1 box Funfetti cake mix
1/2 cup White chocolate chips (optional)
Rainbow sprinkles for the top

1 box Spice cake mix
1/2 cup Candied fruit
1/2 tsp Rum extract

Almond Joy
1 box Rich chocolate cake mix
1/2 cup Coconut flakes
1/4 cup Almonds, chopped

Seven Layer Bar
1 box Rich chocolate cake mix
1/2 cup Butterscotch chips
1/2 cup Coconut flakes
1/2 cup Graham cracker, crushed

Red Velvet
1 box Red velvet cake mix
1 cup White chocolate chips

Lemon Poppyseed
1 box Lemon cake
1/4 cup Poppyseeds

Chocolate Chip
1 box Yellow cake mix
1 cup Chocolate chips

1 box Yellow cake mix
Cinnamon & sugar (to sprinkle on top)

Piñata Cookies
1 box Yellow cake mix
1/2 cup M&Ms
1/2 cup Rainbow sprinkles

Apple Cookies
1 box Spice cake mix
1/2 cup Apples, diced (these will lead to a slightly longer baking time)
~12 Caramel chunks (place one on top of each cookie)
