Apple Butter Peanut Butter Cookies
If you’ve been around Apartment Eats for a little while, you might recall our apple butter post from last year. If you’ve been around even longer than that, you might remember our substitutions post from several years ago. Today, we’re going to put both of those posts to work with these amazing drop cookies. They’re as addicting as they are easy to make, so watch out!
1 cup Butter, softened
2/3 cup Peanut butter (chunky or creamy)
1 cup Sugar
1 cup Brown Sugar
1/2 cup Apple butter
1/2 tsp Cinnamon
2 1/4 cup Flour
1 tsp Baking soda
1 tsp Baking powder
1/2 tsp Salt
Preheat the oven to 350 degrees F and line two baking sheets.
In a large bowl, cream together the butter, peanut butter, and sugars. Add in the apple butter and cinnamon and combine.
In a separate bowl, combine your flour, baking soda, baking powder (which you may omit if you like denser PB cookies), and salt. Gradually add in the dry ingredients while mixing.
Using a spoon or a scoop, measure out roughly two-tablespoon rounds of dough and space them two inches apart on your cookie sheet. Bake for 10-14 minutes or until the edges are golden. Cool on the cookie sheet for two minutes before moving to a wire rack. Store in an airtight container… assuming they don’t all get eaten right away!
