Regular readers! Hello! It’s been a hot minute since I had a recipe to share due to a tumultuous summer and many new life developments. One of my newest adventures is pursuing the tutelage of English as a foreign language. I’m taking a series of online seminars to learn pedagogy and, specifically, how to teach English as a language to those who seek to learn it from scratch.

One of our classroom exercises was to take about five minutes of screen time to present a simple how-to lesson to our classmates. Several people busted out their cooking skills and decided to teach us how to make something delicious (or healthy). Here’s a list of what we learned.

Elizabeth’s Shortbreads

3 1/2 cups Flour
1 1/2 cups Cornmeal
2 cups Butter
1 1/4 cup Sugar

Combine all ingredients in a bowl until a cohesive dough forms. Roll the dough out and cut into rounds or rectangles. Lay the cookies out on a baking sheet and chill them in the fridge for 20 minutes. Preheat the oven to 350 degrees F and bake the chilled cookies for 15-20 minutes or until light golden brown.

Beth’s Dulce de Leche

1 can Sweetened condensed milk
6 cups Water

Place a sealed can of sweetened condensed milk into the pot of a pressure cooker and add six cups of water to the basin. Seal the pressure cooker and run on manual for 40 minutes. Allow the pressure to release as the pot cools. Once the can is safe to touch, open and enjoy your dulce de leche!

Shelia’s Spinach Sipper

2 cups Spinach
1 cup Water
1/2 Lemon, juiced
1 tbsp Honey

Combine all ingredients in a blender and process until smooth. Strain the juice into a glass, and enjoy as a green alternative to lemonade!

Molly’s Cubano Coffee

Molly walked us through the process of creating Cuban coffee based on this video. The end result is a sweet, frothy, creamy espresso beverage.
