Toasted Pumpkin Seeds

‘Tis the season for toasted pumpkin seeds! Whether you’re carving jack-o-lanterns, prepping pie pumpkins, or just going after the goods, pumpkin seeds are hardly in short supply. In our case, we’re going through pie pumpkins left and right and carving out holiday decorations. While pumpkin spice may be the go-to for many people, pumpkin seeds have always been mine. Sweet, savory, spicy, or a combination thereof, you just can’t go wrong with these tasty snacks!

Pumpkin seeds
1 tbsp Olive oil
Spices of your choice

We’ll cover the basics first, and then I’ll give you a few recipes to start.

Preheat your oven to 400 degrees F and line a baking sheet with foil. Rinse your pumpkin seeds in cold water in a colander and dry them with a paper towel to get the excess water off. Pour the seeds into a bowl, preferably one with a lid, and pour in the olive oil. Toss the seeds in the olive oil and then add your spices. Spread the seasoned seeds on your baking sheet and separate them so they’re mostly not touching. Bake for 10-20 minutes or until the seeds are golden. Store in an airtight container and enjoy!

If you want traditional salty seeds, the best way to approach that is to boil them in salty water for about 10 minutes before draining, drying, and baking.

Curry Pumpkin Seeds
1 tsp Salt
1/2 tsp Garlic powder
1/2 tsp Cayenne
1/2 tsp Curry powder
1/4 tsp Cumin
1/4 tsp Turmeric
1/4 tsp Garam masala
1/4 tsp Chili powder

Sweet Seeds
1 tbsp Maple syrup (instead of oil)
1 tsp Cinnamon
Pinch Clove
Pinch Nutmeg

Pumpkin Spice Seeds
tbsp Maple syrup (instead of oil)
1/2 tbsp Pumpkin Pie Spice
