Thai Turkey Burgers

My friends keep asking me for this recipe, and every time, I swear I already wrote it up. This time, I’m definitely, absolutely, 100% actually writing it up! It’s a crowd-pleaser, a friend and family favorite, and a personal go-to dinner. The recipe does feature an unusual product, and that product does make a huge difference in the flavor. I don’t have a good substitute, and you can absolutely cut it, but I seriously, honestly, wholeheartedly recommend it. It’s called Boon sauce, and no, this isn’t sponsored. My friends got me a jar of it for Christmas, and I’m in love with it. It’s delicious in soup, chili, stir fry, burgers, sauces, marinades, and eggs (and, I’m certain, many other things). You can purchase some HERE if you’re interested. If not, just leave it out or throw in some red pepper flakes.

Ingredients
1 lb Ground turkey
1 Shallot (or small yellow onion), minced
1 tbsp Ginger, minced (1 1/2 tsp Ginger paste or 1/2 tsp Ground ginger)
3 cloves Garlic, minced
1 tbsp Dried basil
1 tsp Lime juice
2 tbsp Green onion, chopped
1 Jalapeno, chopped
1 tbsp Fish sauce
1 tbsp Soy sauce
1 tbsp Thai red curry paste
1 tbsp Boon sauce
1 tbsp Sriracha
1/2 cup Panko (or more depending on how wet your ground turkey is)

For Aioli (optional)
3 parts Mayo
1-2 parts Sriracha (adjust for spice)
1 part Boon sauce

Bring a nonstick pan up to medium heat. Throw all your ingredients into a medium bowl and mix thoroughly until combined. Divide the meat into four lumps, round each one into a roughly baseball-sized sphere, and then flatten into a patty. Cook covered in the nonstick pan for ~4 minutes on one side and ~3 minutes on the other. Adjust based on your stove, but the internal temperature should be 165 degrees F when it’s cooked through.

Spread the aioli sauce on both buns and add the patty. Enjoy hot, and make extra aioli for dipping fries!
