Vanilla Chocolate Marble Loaf Cake

I snagged the base for this recipe from Hebbar’s Kitchen, another recipe blog that has some amazing Indian food. I saw his recipe for this marble cake come up on my feed one day, and I thought I’d give it a try. It looked so pretty and so simple, I figured it was worth a shot!

The original recipe doesn’t specify the type of yogurt, so I used plain Greek yogurt. Most Americans favor sweet over savory and more over less. Greek yogurt can be a little bit on the bitter side, which is why I made a substitution on this recipe for whole-fat vanilla yogurt instead. If you don’t mind your sweets a little less on the sweet side, I wholeheartedly recommend using the same amount of plain Greek yogurt and 1 teaspoon per batter of vanilla extract. I also added a 1/4 cup of sugar to the chocolate batter to bring up the sweetness to an American standard. Drop it down to a 1/2 cup if you want to try the original.

Ingredients

Vanilla Batter
1/2 cup Whole-fat vanilla yogurt
1/2 cup Sugar
1/4 cup Canola oil
2 tbsp Water
1 cup Flour
1/4 tsp Baking soda
1/2 tsp Baking Powder
1/8 tsp Salt

Chocolate Batter
1/2 cup Whole-fat vanilla yogurt
3/4 cup Sugar
1/4 cup Canola oil
2 tbsp Water
1/2 cup Flour
1/2 cup Cocoa powder
1/4 tsp Baking soda
1/2 tsp Baking Powder
1/8 tsp Salt

Preheat the oven to 350 degrees F and grease a loaf pan before placing a rectangle of parchment paper at the bottom for easy removal.

In two medium bowls, combine the wet ingredients for each batter before sifting and whisking in the dry ingredients until they’re just combined. Starting with a scoop of the vanilla batter, drop in heaping serving-spoonfuls of each batter, alternating vanilla-chocolate-vanilla-etc. until you run out of batter. Using the blade of a spatula or the back of a spoon, draw lengthwise snaking lines across the top of the batter to make a pretty pattern.

Bake for 60-70 minutes or just until a toothpick inserted into the center comes out clean. Immediately remove from the loaf pan and cool on a wire rack completely before cutting.
