Spicy Korean BBQ-Style Chicken

Here is yet another recipe featuring fresh jalapenos, this time, Korean BBQ style! Fresh peppers add a touch of heat to a delicious classic dish. Served over rice and with a drizzle of teriyaki or soy sauce, you can’t go wrong with this craveworthy chicken marinade, no matter what time of year it is!

2 large Chicken breasts, cubed
1/4 cup Vegetable oil
1/4 cup Rice wine vinegar
1 tsp Sesame oil
1/2 tsp Fish oil
3 tbsp Soy sauce
1 large Jalapeno, minced
1 1/2 tsp Chili powder
1 1/2 tsp Brown sugar
1 1/2 tbsp Ginger paste
4 cloves Garlic, minced
1/2 small bunch Green onions, chopped

Combine all the marinade ingredients in a small bowl and chop the chicken up into cubes. Place the chicken and marinade in either a Ziploc bag or a glass dish with a lid, and store in the fridge for two to 24 hours.

When you’re ready to cook the chicken, slide the contents of the marinade into a nonstick skillet with stir fry veggies. Serve over rice and enjoy!
