This recipe makes slightly ironic use of another recipe of mine, Gourmet Vegan All-Purpose Seasoning. While tilapia obviously isn’t vegan, this seasoning makes for a great crust/rub on this otherwise bland fish. What’s even better is that this recipe works great in a cast iron skillet. Intimidated by your skillet? Don’t be! Just reference the guide in this post for how to clean it when you’re done using it. If you don’t have a cast iron skillet, that’s totally fine, just use what you’ve got. The only change you may have to make is an adjustment to your cook time, since cast iron gets very hot and stays very hot compared to steel or nonstick pans.
2 fillets Tilapia
3 tbsp Flour
3 tsp Vegan seasoning
Pour about 1/4 inch of oil (I used canola) into your cast iron skillet and heat it up over medium-high heat. In a large Ziploc bag, combine the flour and the seasoning (it won’t look like there’s enough). Gently add the tilapia to the bag and carefully shake the bag to coat the fish in the seasoning. Once the pan is hot, turn the heat down to medium and add the fish and cook 3 minutes per side or until the fish is opaque. Serve immediately with greens, rice, or your choice of sides.
