This is one of my favorite simple recipes. My mom used to make this granola for me when I was in high school (and occasionally when I was in college). It’s delicious, quick, and incredibly easy to make. You can also do a lot to personalize it by adding in seeds, nuts, fruits, or anything else you like (*coughchocolatecough*). I’ll give you the basics and a couple of suggestions and you can go wild with the rest!
4 cups Old fashioned oats (anything but instant)
2 cups Chopped nuts (I prefer walnuts)
1 cup Shredded coconut
1-2 cups Other toastable add-ins (flax seeds, hemp seeds, chia seeds, etc.)
1 cup Peanut butter
1 cup Honey
1/4 cup Brown sugar
2 tbsp Cinnamon
1-2 cups Bonus add-ins that don’t go in the oven (chocolate, dried fruit, cereal)
Preheat the oven to 400 degrees F and evenly spread out the oats, nuts, coconut, and any dry add-ins on a pair of baking sheets. Toast them for five minutes. Meanwhile, melt the peanut butter, honey, sugar, and cinnamon in a saucepan on the stove.
Pour the toasted goodies into a large bowl along with any bonus add-ins and use a spatula (or your hands if you can manage the heat, but be very careful) to combine all of your ingredients. Either leave in the bowl to cool or spread over parchment paper. Store in a sealed container and enjoy at your leisure!
