Super Moist Banana Bread

As some of you may recall (and as many others will likely not be surprised to find out), I’ve posted about banana bread before. In fact, I’ve got a few banana bread items: Vegan Banana Nut Muffins, Dessert Banana Bread, and Banana Pumpkin Bread. What I haven’t done is plain ol’ banana bread. Sure, this is a bit more decadent than the classic bready banana bread, but I’m sure if you give me another couple of years, I’ll feature that recipe, too.

Ingredients
4 Very ripe bananas
1 tsp Lemon juice
2 cups Flour
1 tsp Baking soda
1 tsp Baking powder
1 1/2 tsp Cinnamon
1/4 tsp Nutmeg
3/4 cup Brown sugar
5 tbsp Butter, softened
2 Eggs
1 1/2 teaspoons Vanilla extract
1/2 cup Greek yogurt

325 for 60-70 minutes

Preheat the oven to 325 degrees F. Grease and line a bread pan with two strips of parchment paper in a cross. Whisk the dry ingredients together in a bowl and set aside. In another bowl, mash the bananas and mix in the lemon juice before setting them aside as well.

In a large bowl or the bowl of a stand mixer, cream together the butter and sugar before adding in the egg and vanilla extract. Add in the bananas and the yogurt and mix until just combined. Gradually fold in the dry ingredients without overmixing.

Pour the batter into your greased and lined bread pan and bake for 60-70 minutes, testing with a toothpick starting at the one hour mark. Remove the bread from the oven when the toothpick comes out clean. Let the bread cool in the pan on a wire rack for about an hour before removing it with the parchment. Store in the fridge or freeze if you don’t plan to eat it within the week.
