Sweet Cinnamon Sourdough Loaf

I’ve had my sourdough starter for a couple of months now, and I’m looking for a change from our delicious banana bread (mostly because I’m out of bananas this time around, and Hubby wants his morning slice of homemade bread). I’m sure my bread machine is feeling a little left out since we started making sourdough this and sourdough that, but it’s just flour, water, and wild yeasts, so substituting it into an existing recipe shouldn’t be too hard.

If you’re interested in the tradeoff, 1 cup of sourdough starter takes the place of one packet of yeast, 1/2 cup of water, and 3/4 cup of flour. Sourdough takes a little longer to rise, so adding some extra yeast for a boost if you’re using a machine can really help. Alternatively, if your machine has a sourdough setting, use that!

1/2 cup Water
4 tbsp Butter, cut into pieces
1/4 cup Sugar
2 tbsp Molasses
2 1/4 cup Bread flour
1/4 cup Milk
1 cup Ripe (fed) sourdough starter
1 tsp Bread machine yeast
1/3 cup Brown sugar
2 tbsp Ground cinnamon

Add all the ingredients to your bread machine and set it to bake on the Sweet Loaf setting with a medium crust. If you’re going to be home and monitoring the bread, reserve the brown sugar and cinnamon to add into the mixture after the first rise (or wait until after the second rise and add it manually as a cinnamon swirl).

Cool on a wire rack and slice sideways (lay the loaf on its side and slice it from one “side” to the other, like I talk about at the bottom of this article) Store in a bread box or an airtight container in the fridge for about a week.
