Potato Breakfast Bake

During our time in stay-at-home quarantine, we’ve eaten a lot of potatoes. Like, if you took all the potatoes we’ve eaten since March and placed them in a pile, you could probably climb it and see into a second-story window. It’s obscene… but it’s also cheap, which is what brings us here today.

Potatoes can be served as a side for breakfast or dinner (or lunch if you’re fancy enough to have a side with your lunch), and whether you have leftovers or make them fresh for the meal at hand, they’re a pretty agreeable go-to.

4 – 6 Red potatoes, cut into chunks
1/2 a medium Onion, diced
1/4 cup Bacon pieces
1 tsp Garlic powder
1/2 tsp Smoked paprika
1/2 tsp Cumin
1/2 tsp Cayenne
Salt & Pepper, to taste
1 cup Shredded cheddar cheese
3 Green onions, chopped

Preheat the oven to 400 degrees F. Toss potatoes, onion, peas, and spices into a glass casserole dish. Cover the dish with foil, and slide it into the oven for 30 minutes. At the 30 minute mark, add your cheese, replace the foil, and cook for another 10 minutes or until the potatoes are tender and the cheese is melted. Garnish with green onions and serve with a side of eggs.

Save the leftovers and make a new breakfast the following day by adding the potatoes to your scrambled eggs. Include a can of peas if you want some extra mileage for pennies and don’t care about being judged by anyone who finds out.
