When it comes to chili, you eventually reach a point where you feel like every “new” recipe is just a reiteration of one you tried three months ago. I know I’ve reached that point, so I decided to try something different: No tomato. The main reason this recipe ended up in my pot is that I was stuck with a flat of chicken thighs that I thought were chicken breasts (an online order mixup). If you, too, find yourself stuck with a massive flat of chicken leg meat, here’s what you can do with it.

Ingredients
6 Chicken thighs (trimmed of skin and fat)
1 medium Onion, chopped
3 cloves Garlic, minced
1 1/2 cups Chicken broth
1 tsp Lime juice
2 tsp Cumin
1 tsp Oregano
1/2 tsp Cayenne
1/2 tsp each Salt and Pepper
1 tsp Tabasco
2, 15 oz cans White beans (cannellini, great northern, etc.), drained and rinsed
1, 15 oz can Corn, drained and rinsed
1/3 cup Heavy cream

Prep your chicken, rinse your canned goods, and throw everything in the crock pot with the chicken on the bottom and the other ingredients mixed in around and above it. Cook on low for 5-6 hours. Shred the chicken and remove the bones. Add in the cream, stir, and enjoy!
