BBQ Chicken Pizza
I’ve posted a couple of different pizza recipes on here before, including a post about how to do the basics, but this particular pizza was so good, I felt that it warranted its own post! You can make it spicy with hot sauce if you want, or you can keep it traditional. Either way, once you get in the swing of making your own pizza, you’re not going to want to order it out anymore!
1/2-1 lb Chicken tender or breast meat
2 1/2 cups Barbecue sauce
2 cups Shredded mozzarella cheese
1/2 a medium Sweet onion, sliced into half rings
1 tbsp Butter, melted
1 tbsp Garlic powder
1 tbsp Parsley flakes
Chipotle hot sauce (optional, I used After Death Sauce)
Preheat the oven to 450°F. Once it’s preheated, preheat the pizza stone for 15 minutes.
While the oven is preheating, start cooking the chicken slices in a nonstick pan over medium heat. Drizzle with BBQ sauce and cook five minutes on both sides and then caramelize three minutes on each side. Remove from heat and set aside. Once it’s cooled, cut the chicken into 1/2 inch, bite-sized pieces.
While the stone is preheating, caramelize the onions in a buttered pan over medium heat. Remove from the stove and set aside once the onions are soft and translucent.
Stretch the dough using the back of your hands. Keep it round by using gravity to pull the dough and make your way around the edges until it’s large enough.
Place the dough on your preheated stone (carefully). Brush the crust with mted butter and sprinkle with garlic powder and parsley flakes.
Spread a layer of BBQ sauce on the dough and cover with shredded mozzarella cheese. Add the chicken and onions, dot with a chipotle hot sauce. Add more cheese and top with a spiral of BBQ sauce.
Bake for 15-20 minutes until the crust is golden brown. Let cool slightly, slice, and enjoy!
